Wholemeal fettuccine with ricotta, radicchio and amaretti

INGREDIENTS
for 4 people
  • 250 di Wholemeal Fettuccine “La Campofilone”
  • 1 radish
  • 200 g ricotta
  • 200 g Parmesan Cheese
  • 4 amaretti
  • 1 shallot
  • 40 g butter
PREPARATION

Cut the radicchio into strips. In a pan, melt the butter and add the chopped shallot, brown the onion and add the radicchio. Combine the ricotta, parmesan and grated amaretti in a bowl, adding some cooking water to obtain a creamy mixture.
Cook the fettuccine in boiling water for 2-3 minutes and sauté in the pan with the radicchio.
Finally, mix the pasta cold in the bowl with the ricotta, parmesan and amaretti mixture. Serve with a sprinkling of amaretti biscuits.
